This Japanese inspired dish came about when I had a lot of spinach left in the fridge. After a little research, I decided to make spinach pasta. Whilst getting the ingredients ready, I also discovered an almost used tub of cream cheese, adding a spoonful of this to the blended spinach made a really luxurious sauce.

Spinach Pasta
A quick and easy lunch which you will make again and again, it’s rich spinach and garlicy taste is fantastic and very moreish.
Ingredients
- 200 g Spaghetti
- 100 g Spinach
- 3 Cloves of Garlic
- 1.5 tbsp Cream Cheese
- 1 tbsp Olive Oil
- 20 Pre-cooked clams (optional)
- A splash of white wine
- A pinch of salt
- 1 Small Chilli (For decoration)
Instructions
- Blanch the spinach in boiling water for 30 seconds, drain and rinse under cold water
- Using a small blender, blitz the spinach until there are no lumpy bits
- Add the cream cheese to the spinach and do another quick blend until smooth
- Dice the garlic
- Bring a pan of water to the boil with a pinch of salt, add the spaghetti cook and until al dente
- Put a frying pan on a medium heat, add the olive oil, then the garlic. Cook until you can smell the fragrance from the garlic
- Add the clams to warm them through, add the white wine and cook for a few minutes
- Add the spaghetti and a 1/4 cup of the cooking water to the frying pan
- Allow the pasta to absorb some of the flavours and liquid
- Add the spinach paste to the pasta and stir through
- Serve and enjoy!
