Brothless Dan Dan Noodles (汁なし坦々麺)

Dan Dan Noodles actually come from Sichuan province in China. The Japanese have their own style which has a soup base. However the more popular style is now the brothless dan dan noodles. As the name suggests there is no soup and is closer to the original Chinese style.

Dan Dan Noodles consists of a bowl of noodles topped with fried mince meat, vegetables and a spicy sauce. To finish the dish we sprinkle ground Sichuan Peppercorns.

Ingredients

  • 160 g Dried Noodles

Meat

  • 180 g Pork Minced Meat
  • 1 Green Onion finely chopped
  • 1 Garlic Clove finely chopped
  • 1 tsp Chilli Bean Sauce
  • 1 tsp Sweet Bean Paste
  • 1 tsp Shaoxing Cooking Wine or Sake or Rice Wine
  • 1 tsp Soy Sauce
  • 1/2 tsp Sugar
  • 1 tsp Oil for frying pan

Sauce (Per Bowl)

  • 1 tsp Soy Sauce
  • 1 tsp Shaoxing Cooking Wine or Sake or Rice Wine
  • 1 tsp Black Vinegar or Rice Wine Vinegar
  • 1 tsp Chilli Bean Sauce
  • 1 tsp Sweet Bean Paste
  • 1/2 tsp Sugar
  • 1/4 tsp Chicken stock
  • 30 ml Noodle Water (Hot)
  • 1 tsp Spicy Hot Chilli Oil Sauce (Adjust to your taste)

Topping

  • 1 Cooked & Halfed Pak Choi
  • 1 handful Boil Bean Sprout
  • 2 Green Onion (White part only cut lengthways into fine strips)
  • 1 tsp Ground Sichuan Peppercorns (Adjust to your taste)

Instructions

  • Add the oil into frying pan over a medium heat, add the pork and fry it until it is cooked though, then push to the other side.
    Cook the meat
  • Turn down to a low heat, add chilli bean paste to the empty side and fry to release the aroma. Next mix the paste with the pork until it is coated.

  • Add sweet bean paste, shaoxing cooking wine, soy sauce, sugar, green onion, garlic, then mix them will.

  • Bring a large pan of water to the boil and add the noodles, cook until the noodles are al dente (cooked to be firm to the bite). Drain the noodles and wash under cold water and set aside to drain further. We wash the noodles under cold water to stop them from sticking together.
    Prepare the Noodles
  • Put all of the sauce ingredients into a bowl and mix well. (Do this in each bowl)
    Make the sauce
  • Bring another large pan of water to the boil and cook the noodles again for 1 or 2 minutes, just to heat the noodles through. Add a spoonful of noodle water to the sauce and mix.
    Heat the noodles
  • Once the noodles are hot, drain them and share between the bowls. Mix the noodles in the sauce and add the meat and toppings. Sprinkle the ground Sichuan Peppercorns as much as you like.
